Open-Face Meat Loaf Sandwich

2 pounds ground beef

1 cup Italian-style bread crumbs

2 eggs

1 jar (26 ounces) spaghetti sauce, divided

2 tablespoons grated Parmesan cheese

1 teaspoon salt

1/4 teaspoon black pepper

1 loaf (1 pound) Italian bread, cut in half lengthwise

1 cup (4 ounces) shredded mozzarella cheese

1. Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with aluminum foil and coat the foil with nonstick cooking spray.

2. In a large bowl, combine the ground beef, bread crumbs, eggs, 1 cup spaghetti sauce, the Parmesan cheese, salt, and pepper; mix well. Divide the mixture and form into six equal-sized patties; place on the baking sheet.

3. Bake for 12 to 15 minutes, or until no pink remains. Remove the patties with the foil from the baking sheet.

4. Line the baking sheet with another piece of aluminum foil and place the Italian bread halves on the baking sheet. Place the meat loaf patties on the bread and top with the remaining spaghetti sauce. Sprinkle with the mozzarella cheese and bake for 8 to 10 minutes, until heated through. Slice each bread half into 3 servings and serve immediately.
