Potato Dumplings

8 medium potatoes

1/4 cup flour

2 tablespoons melted butter

2 eggs, slightly beaten

1 teaspoon salt


boiling salted water

1 cup butter

2/3 cups fine dry bread crumbs

Peel, cook and rice potatoes. Add the 2 Tablespoons butter,

flour, eggs, salt and pepper. form into 24 small balls and chill.

brown bread crumbs in 1/4 cup butter set aside.

Drop potato balls into large kettle of gently boiling salted water.

Cover and steam 12 minutes. Drain well

Split each dumpling in half. Pour browned, melted butter over split dumplings and sprinkle with bread
