Italian casserole


1 lb Lean ground beef

1 Big handful uncooked Macaroni

1 Stalk celery sliced

1 Small onion sliced finely

8oz Whole button mushrooms

1/2 cup Vegetable stock

2x Tomato sauce (recipe at the bottom)

1 ½ tsp Worchestershire

¾ tsp salt

¾ tsp chili powder

As much grated cheese as you want


1. Saute celery, mushrooms and onion until onions are clear and the rest are going soft. Remove from heat and put into crock pot with sauce, spices.

2. In water cook macaroni for 8 minutes. Drain.

3. Brown mince in pan until well done. Drain, and add to soup mixture, stir well, add macaroni and ½ cup vegetable stock.

4. Let simmer on low for about 1 hour, then taste if needs more zip add ½ tsp more of chili powder.

5. Put in casserole dish and cover with grated cheese. Bake at gas mark 3, 160 degrees C or 325 degrees F for 35-45 mins or until bubbly.

This is a great dish to enjoy anytime!

Tomato sauce:


A little oil (olive)

1 Onion, chopped

2-3 Cloves of garlic, crushed

3 tbsp Tomato puree

1 Tin of chopped tomatoes

2 tsps of Basil

2 tsps of Oregano

Salt & pepper, seasoning


1. Heat the oil in the pan on a low heat and put the onions in and the garlic, cook until onions are soft.

2. Mix in the tomato puree and the herbs and then add the tomatoes, season.

3. When it has simmered for 15 mins take it off the heat and then put the mixture into the food processor or blender. Season to tastewith the herbs if you need any more, don't put in too much because you could spoil the flavour.
